I made these Raspberry Jam Muffins for my mom’s birthday last month, and everyone loved them. More like a dessert than a breakfast food.

Our mango trees went crazy this year, and we have lots of mangoes to show for it.  This means lots and lots of mango bread, muffins and smoothies. :) I made these Mango Muffins for Kayla’s graduation reception, and they were a hit.

Homemade Yogurt and Granola

Last week my pen pal Serenity sent me a recipe for homemade granola.  I have always wanted to try my hand at making homemade yogurt, so I decided this was the perfect time to try both!  I used this recipe (on the right of the page) for the yogurt.

The milk mixture is heating up… then cooling down in the sink.

The granola turned out great! – Ready to eat granola and yogurt

Everyone loved it!  The two quarts of yogurt only lasted a few days… I think I’ll be making this quite often in the future!

Creamy Fudge

September 17, 2008 at 8:59 pm | In A's Posts, Photos, Recipes | 4 Comments

Last week, I decided to make some fudge. I used a recipe from Good Housekeeping, and it turned out great.

16 squares (16 ounces) semisweet chocolate, chopped

1 square (1 ounce) unsweetened chocolate, chopped

1 can (14 ounces) sweetened condensed milk

1 1/2 teaspoons vanilla extract

1/8 teaspoon salt

  • Line 8-inch square baking pan with foil, extending foil above rim of opposite sides.
  • In 2-quart saucepan, combine semisweet and unsweetened chocolates and condensed milk. Cook, stirring constantly, over medium-low heat until chocolates have melted and mixture is smooth, about 5 minutes
  • Remove saucepan from heat; stir in vanilla and salt. Pour chocolate mixture into prepared pan; spread evenly. Refrigerate until firm, at least 4 hours or up to overnight.
  • Remove fudge from pan by lifting edges of foil. Cut into 8 strips, then cut each strip crosswise into 8 pieces. Place pieces between waxed paper in airtight.

For chocolate walnut fudge, prepare as directed but stir in 1 cup of walnuts, coarsely chopped, with vanilla and salt.

If you haven’t been to TammysRecipes.com yet, you need to go there now!  She seriously has the best recipes!  (And great photos of the food!)  Every single one we have tried has turned out delicious.  Our newest favorite of her recipes is the one for Chocolate-Bottom Banana Squares.  We recently made them for company and they were absolutely scrumptious!

If your family likes banana bread and chocolate, you must try these.  Here is the recipe…

Yield: 24 squares

Ingredients:

1/2 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups mashed banana (about 3 medium bananas)
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup baking cocoa
1 cup chocolate chips

Instructions:

1. In mixing bowl, cream butter and sugar. Add egg, vanilla, and bananas, beating thoroughly.

2. In a separate bowl, combine flour, soda, baking powder, and salt. Add to creamed mixture and mix well.

3. Divide batter in half. Add the cocoa to one portion of the batter. Spread that portion in the bottom of a greased 9 x 13-inch baking dish. Spoon remaining batter on top, swirling gently with butter knife if desired, and sprinkle with chocolate chips.

4. Bake at 350 degrees for 30 minutes or until batter tests done with a toothpick or fork. Cool and cut into 24 squares.

Celebrating

Today my parents celebrated their twenty-second anniversary.  We had a special breakfast of Chocolate French Toast in honor of the occasion.  The recipe is from Handmaidens of the Shepherd (Thanks!).  Mom and Dad also went out to eat tonight by themselves. Anyway, we were able to catch a couple photos of the french toast (before it was all gone), so here they are:

We made these delicious pumpkin rolls for dinner last night.  They’re perfect!  So moist and soft, and you can’t even taste the pumpkin.  We would’ve taken our own picture, but our camera is incapacitated at the moment.  For this yummy recipe, and many others, head to Tammy’s Recipes!

Honey Pumpkin Muffins

I just tried this recipe out last night and they turned out great.  I wouldn’t say they’re the prettiest muffins ever, but they are delicious!  They are soft, moist, and best of all – super easy and quick to make!

 Preheat oven to 375°

Beat together 1 cup canned pumpkin, 2 eggs, 3/4 cup vegetable oil, and 3/4 cup honey.

Then add: 1 1/3 cup fresh wheat flour, 1 tsp. baking soda, 1/4 tsp. nutmeg, 1 cup golden raisins, 1 tsp. baking powder, 1 tsp. allspice, 1 cup chopped nuts (I used walnuts).

Mix until moistened. Place in lightly greased muffin tins.

Bake at 350º for 12-20 minutes depending on size of tins.

Enjoy!
