Honey Pumpkin Muffins

I just tried this recipe out last night and they turned out great.  I wouldn’t say they’re the prettiest muffins ever, but they are delicious!  They are soft, moist, and best of all – super easy and quick to make!

 Preheat oven to 375°

Beat together 1 cup canned pumpkin, 2 eggs, 3/4 cup vegetable oil, and 3/4 cup honey.

Then add: 1 1/3 cup fresh wheat flour, 1 tsp. baking soda, 1/4 tsp. nutmeg, 1 cup golden raisins, 1 tsp. baking powder, 1 tsp. allspice, 1 cup chopped nuts (I used walnuts).

Mix until moistened. Place in lightly greased muffin tins.

Bake at 350º for 12-20 minutes depending on size of tins.
